# Ingredients:

01 - 2 medium chicken breasts (approximately 350 grams), diced

02 - Add the diced chicken to the hot pan. Stir-fry until golden brown and cooked through, approximately 4 to 5 minutes. Remove the chicken and set it aside with the bacon.
03 - Add the remaining 1 tablespoon of vegetable oil to the pan if necessary. Sauté the diced onion and minced garlic for 1 to 2 minutes until fragrant.
04 - Push the sautéed vegetables to the side of the pan. Pour in the lightly beaten eggs and scramble them until they are just set.
05 - Add the thawed peas and carrots mix to the pan. Stir-fry for 1 to 2 minutes until heated through.
06 - Add the cold cooked jasmine rice to the wok or skillet, breaking up any clumps. Stir-fry for 2 to 3 minutes, ensuring the rice is thoroughly heated.
07 - Return the cooked chicken and crispy bacon to the pan. Add the soy sauce, oyster sauce, sesame oil, ground white pepper, and salt. Toss all ingredients together to combine thoroughly and allow them to heat through.
