06 - 2 tbsp olive oil
07 - 1 tsp balsamic vinegar
08 - 1/2 tsp dried thyme
09 - 1/2 tsp dried rosemary
10 - 1/2 tsp sea salt
11 - 1/4 tsp black pepper

→ Garnish

12 - 2 tbsp crumbled feta cheese (optional)
13 - 1 tbsp chopped fresh parsley

# Directions:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together olive oil, balsamic vinegar, thyme, rosemary, salt, and black pepper to create the marinade.
03 - Add carrot, bell peppers, zucchini, and parsnip sticks to the marinade; toss thoroughly to ensure even coating.
04 - Place the vegetable sticks on the prepared baking sheet in parallel pairs, alternating colors to mimic sleigh rails.
05 - Roast for 20 to 25 minutes, turning the vegetables halfway through, until tender and lightly caramelized.
06 - Transfer roasted vegetables to a serving platter, sprinkle with feta cheese if desired, and garnish with chopped parsley. Serve warm or at room temperature.
