Goat Cheese & Hot Honey Chicken (Print)

Golden sourdough melted with tangy goat cheese, chicken, and spicy honey drizzle

# Ingredients:

→ Bread

01 - 4 slices sourdough bread

→ Dairy

02 - 3.5 oz goat cheese, softened
03 - 2 tablespoons unsalted butter, softened

→ Protein

04 - 1 cup cooked shredded chicken

→ Sauces & Seasonings

05 - 2 tablespoons hot honey
06 - 0.5 teaspoon chili flakes plus extra for garnish
07 - Salt and black pepper to taste

# Directions:

01 - In a bowl, combine shredded chicken with 1 tablespoon hot honey, 0.5 teaspoon chili flakes, and a pinch of salt and pepper. Mix well to coat evenly.
02 - Spread a thin layer of butter on one side of each bread slice.
03 - Place two slices buttered side down on a clean surface. Spread half the goat cheese evenly onto each slice.
04 - Top with the hot honey chicken mixture, spreading evenly across the goat cheese.
05 - Drizzle the remaining hot honey over the chicken, then crumble any remaining goat cheese on top.
06 - Place the remaining bread slices on top with buttered side facing up.
07 - Heat a skillet or griddle over medium heat. Place sandwiches in the pan and cook for 3 to 4 minutes per side, pressing gently, until bread is golden and crisp and cheese is melted.
08 - Remove from heat, slice in half, and sprinkle with extra chili flakes if desired. Serve hot.

# Expert Tips:

01 -
  • It tastes like you spent way more time in the kitchen than you actually did.
  • The contrast of crispy bread, melting cheese, and sweet heat hits every craving at once.
  • Rotisserie chicken means this comes together faster than ordering takeout.
02 -
  • If your goat cheese is cold and stiff, it won't spread properly and you'll end up with clumpy patches instead of creamy coverage—let it sit on the counter for fifteen minutes.
  • Medium heat is your friend here; crank it too high and your bread will char before the cheese melts, crank it too low and you'll end up with soggy, greasy bread.
03 -
  • Make your hot honey in a jar and keep it in the fridge for weeks—it becomes invaluable for drizzling on pizza, dipping bread, or drizzling over cream cheese and crackers.
  • If you're cooking for multiple people, have all your ingredients prepped and lined up before you start cooking; grilled cheese waits for no one and tastes best served immediately.
