# Directions:
- Preheat oven to 425°F. Line a large baking sheet with parchment paper.
- Remove leaves from cauliflower and trim stem while keeping core intact. Slice each head into 1-inch-thick steaks to yield 2 to 3 steaks per head. Reserve loose florets for alternative use.
- In a small bowl, whisk together olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, lime zest, and lime juice until fully combined.
- Arrange cauliflower steaks on prepared baking sheet. Brush both sides generously with chili-lime marinade, ensuring even coating.
- Roast for 25 to 30 minutes, flipping halfway through cooking, until golden brown and crisp-tender.
- In a blender or food processor, combine avocado, sour cream, lime juice, garlic, cilantro, and salt. Blend until smooth, adding water one tablespoon at a time to achieve desired consistency.
- Arrange roasted cauliflower steaks on serving plates. Drizzle generously with avocado crema. Top with fresh cilantro, lime wedges, and sliced jalapeño if desired.
