# Directions:

02 - Add the remaining 1 tablespoon of olive oil to the same skillet. Sauté the diced onion and both bell peppers for 3–4 minutes until softened.
03 - Stir in the sliced sausage and cook for 4–5 minutes, until browned and heated through.
04 - Add the minced garlic, smoked paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrantly aromatic.
05 - Return the seared potatoes to the skillet. Toss all ingredients together and cook for an additional 3–4 minutes, allowing the flavors to meld and combine.
06 - Taste the hash and adjust seasoning with additional salt and pepper if necessary.
07 - Sprinkle with fresh parsley before serving, if desired.
