01 - 12 ounces smoked sausage or cooked breakfast sausage, sliced

02 - 1.3 pounds Yukon Gold or russet potatoes, peeled and diced
03 - 1 medium yellow onion, diced
04 - 1 red bell pepper, diced
05 - 1 green bell pepper, diced
06 - 2 cloves garlic, minced

08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon dried thyme

# Directions:
01 - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, for 8–10 minutes until lightly golden and just tender. Transfer the potatoes to a separate plate and set aside.
02 - Add the remaining 1 tablespoon of olive oil to the same skillet. Sauté the diced onion and both bell peppers for 3–4 minutes until softened.
03 - Stir in the sliced sausage and cook for 4–5 minutes, until browned and heated through.
04 - Add the minced garlic, smoked paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrantly aromatic.
05 - Return the seared potatoes to the skillet. Toss all ingredients together and cook for an additional 3–4 minutes, allowing the flavors to meld and combine.
06 - Taste the hash and adjust seasoning with additional salt and pepper if necessary.
07 - Sprinkle with fresh parsley before serving, if desired.
