17 - 2 green onions, sliced

# Directions:

01 - Toss chicken thigh pieces with cornstarch, kosher salt, and black pepper in a bowl until evenly coated.
02 - Whisk together honey, soy sauce, sriracha, rice vinegar, ketchup, minced garlic, and grated ginger in a separate bowl. Set aside.
03 - Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook for 5 to 7 minutes until golden and cooked through. Remove to a plate.
04 - Add remaining 1 tablespoon oil to the skillet. Add bell peppers, red onion, and sugar snap peas. Stir-fry for 3 to 4 minutes until crisp-tender.
05 - Return chicken to the skillet. Pour sauce over chicken and vegetables. Stir well and cook for 2 to 3 minutes until sauce thickens and everything is evenly coated.
06 - Serve hot over jasmine rice, garnished with sliced green onions and sesame seeds.

# Expert Tips:

01 -
  • The sauce hits that perfect sweet spot where the honey balances the heat just right
  • Everything cooks in one skillet so cleanup is practically nonexistent
  • The vegetables stay crisp instead of turning mushy like in some stir fries
02 -
  • Dont overcrowd the pan when searing the chicken or it will steam instead of getting that golden crust
  • The sauce will look thin at first but thickens quickly once it hits the hot pan
  • Have all your ingredients prepped before you start cooking, this moves fast once you begin
03 -
  • Let the skillet get properly hot before adding the chicken for the best sear
  • Taste the sauce before adding it to the pan and adjust the heat level if needed
