01 - In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring mixture to a boil over medium heat. Add all-purpose flour in one addition, stirring vigorously until dough forms and pulls away from sides. Remove from heat and allow dough to cool for 5 minutes.
02 - Add eggs and vanilla extract to the cooled dough, mixing thoroughly until the mixture is smooth and glossy. Transfer dough to a piping bag fitted with a large star tip.
03 - Heat 2 inches of vegetable oil in a heavy pot to 350°F. Pipe 1-inch lengths of dough directly into hot oil, cutting with scissors. Fry in batches until golden brown, approximately 2 to 3 minutes per batch.
04 - Remove churro bites using a slotted spoon and drain on paper towels. While still warm, toss churro bites in cinnamon sugar mixture to coat evenly.
05 - In a large skillet, melt unsalted butter over medium heat. Add apple chunks, light brown sugar, ground cinnamon, and a pinch of salt. Sauté until apples are tender and caramelized, about 6 to 8 minutes. Allow mixture to cool slightly before assembly.
06 - Alternate churro bites and caramel apple pieces on each wooden skewer. Serve assembled skewers warm or at room temperature.
