- Red bell pepper: 1 large cut into 2.5 cm pieces
- Red onion: 1 small cut into chunks
- Olive oil: 2 tbsp
- Smoked paprika: 1 tsp
- Dried oregano: 1/2 tsp
- Garlic powder: 1/4 tsp
- Freshly ground black pepper: 1/4 tsp
- Fresh parsley (optional): 1 tbsp chopped
Instructions
- Make the marinade:
- Whisk together the olive oil smoked paprika oregano garlic powder and black pepper
- Combine ingredients:
- In a large bowl combine the sausage slices bell pepper pieces and onion chunks then drizzle the marinade over and toss to coat evenly
- Thread skewers:
- Alternate sausage cheese pepper and onion starting and ending with sausage for better grip
- Preheat grill:
- Preheat a grill or grill pan over medium-high heat
- Grill skewers:
- Grill for 10 to 12 minutes turning occasionally until vegetables are tender and sausage heated through add cheese cubes midway after 5 or 6 minutes
- Serve:
- Transfer to serving platter sprinkle with parsley and serve hot
