# Directions:

01 - Heat 2 tablespoons of oil in a large non-stick skillet over medium heat. Add the diced potatoes and sauté, stirring occasionally, for 10 to 12 minutes until golden and tender.
02 - Incorporate the chopped onion and bell pepper if using. Continue cooking for 5 minutes until softened and lightly caramelized.
03 - Stir in the sliced hot dogs or sausages and cook for 3 to 4 minutes until browned evenly.
