01 - 4 slices sturdy sourdough or country bread
→ Cheese
02 - 4 oz sharp cheddar cheese, shredded
→ Kimchi
03 - ½ cup well-drained kimchi, chopped
→ Butter
04 - 2 tbsp unsalted butter, softened
→ Optional Additions
05 - 1 tbsp sliced green onions
06 - 1 tsp toasted sesame seeds
# Directions:
01 - Butter one side of each bread slice evenly.
02 - Place two bread slices buttered side down on a flat surface.
03 - Distribute shredded cheddar evenly over the bread slices.
04 - Top the cheese with chopped kimchi, spreading uniformly; add green onions and sesame seeds if desired.
05 - Cover with remaining bread slices, buttered side facing outward.
06 - Warm a skillet over medium-low heat.
07 - Place sandwiches in skillet and cook 3 to 4 minutes per side, pressing gently until bread is golden and cheese is melted.
08 - Remove sandwiches, let rest for one minute, then cut in half and serve warm.
