21 - 2 tablespoons olive oil
22 - 1/2 teaspoon smoked paprika
23 - 1/2 teaspoon garlic powder
24 - Salt and freshly ground black pepper, to taste

# Directions:

01 - Preheat the oven to 425°F. Toss sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange in a single layer on a baking sheet.
02 - Bake fries for 25 to 30 minutes, turning halfway, until golden and crisp. Remove from oven and set aside.
03 - Heat olive oil in a large soup pot over medium heat. Add diced onion, minced garlic, carrot, and celery. Saute for 5 minutes until vegetables are softened.
04 - Add ground beef or turkey to the pot. Cook, breaking up meat with a wooden spoon, until thoroughly browned.
05 - Stir in dried oregano, dried basil, red chili flakes (if using), and tomato paste. Cook for 1 minute to release aromas.
06 - Pour in crushed tomatoes and chicken or vegetable broth. Bring mixture to a boil, then reduce heat to simmer.
07 - Add broken lasagne noodles to the pot. Simmer uncovered for 12 to 15 minutes, stirring occasionally, until noodles reach al dente texture.
08 - Fold in baby spinach and season soup with salt and freshly ground black pepper. Simmer for 2 minutes, until spinach wilts.
09 - In a mixing bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, and chopped parsley.
10 - Ladle hot soup into serving bowls. Top each bowl with a generous spoonful of cheese mixture. Serve immediately, accompanied by sweet potato fries.
