I first created Neon Noodle Cloud for my nephew's birthday, and the kids were amazed: each bowl was a work of art and the creamy sauce made it an instant favorite with the whole family.
Ingredients
- Noodles: 300 g dried wheat noodles or ramen noodles, food coloring gels (pink, blue, yellow, green)
 - Cloud Sauce: 200 ml whole milk or plant-based milk, 120 g cream cheese or vegan alternative, 1 tbsp unsalted butter or vegan butter, 2 tbsp grated parmesan cheese or nutritional yeast, 1 tsp cornstarch, 1/4 tsp salt, 1/4 tsp white pepper
 - Garnish: 2 scallions finely sliced, 1 tbsp toasted sesame seeds, edible flowers or microgreens
 
Instructions
- Color the water:
 - Bring a large pot of water to boil. Divide water into separate bowls based on the color varieties you want; add food coloring gels to each and mix for vibrancy.
 - Cook noodles:
 - Split the noodles into equal parts and cook each in the colored water for 2 to 3 minutes less than the package instructions. Rinse under cold water and set aside.
 - Make cloud sauce:
 - Melt butter in a saucepan over medium heat. Stir in cream cheese and mix until smooth. Add milk, parmesan, cornstarch, salt, and white pepper; whisk and cook until the sauce thickens and becomes creamy.
 - Combine and serve:
 - Add noodles to the sauce and gently fold to coat: try to keep colors separate for a cloud effect or swirl for a marbled look. Serve topped with scallions, sesame seeds, and edible flowers or microgreens.
