- Line an 8x8-inch baking pan with parchment paper to prevent sticking.
- In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt. Stir until evenly incorporated. Press the mixture firmly and evenly into the prepared pan. Refrigerate while preparing the gummies.
- Pour fruit juice into a small saucepan. Evenly sprinkle gelatin over the juice and let sit for five minutes. Gently heat over low, stirring continuously until gelatin dissolves. Add honey and stir thoroughly. Transfer mixture to a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes until fully set.
- Once the gummies are set, slice them into small cubes suitable for topping.
- Remove the oat base from the refrigerator. Scatter the gummy cubes, crushed freeze-dried fruits, and freeze-dried candy evenly over the top. Press toppings gently into the base to ensure adhesion.
- Return the pan to the refrigerator and chill for an additional 10 to 15 minutes to set the toppings firmly.
- Using parchment paper, lift the slab out of the pan. Cut into 12 equal bars using a sharp knife. Serve immediately or store in an airtight container.
